It would be hard to walk too far without coming across some funky art or a brightly painted home. It just had personality and style.</p>
<p>So to walk a few blocks and find this in the middle of what was otherwise a residential street, well, it just makes sense for Eugene. Ladies and Gentlemen, <a href="http://offthewaffle.com/index.html" target="_blank">Off the Waffle</a>:</p>

<p>Although we only got to go there a few times before we headed East (and then back West AGAIN), it quickly became a favorite. A fun little place owned by guys with amazing hairdos (the sign is truly what their hair looks like&#8230;yeah, it&#8217;s that awesome) was just as interesting on the inside as it was on the outside.</p>
<p>In addition to the free book exchange and Jenga blocks strewn about, if you happened to have a shine for waffles but may be short the cash, well, let&#8217;s barter on that, baby:</p>

<p>In addition to an assortment of teas, the menu was simple and happily sported a Vegan option called the No Dairy Gary:</p>

<p>Each waffle is made to order and super yummy:</p>

<p>While these may be a wee bit pricey for the size, they definitely had an amazing flavor. And we just learned that since we&#8217;ve moved (sniff sniff), they&#8217;ve opened a new location near the U of O campus. So if you haven&#8217;t been off your waffle yet (and are fortunate enough to live in Eugene), it&#8217;s really about time you did.</p>

			<content:encoded><![CDATA[<div class='snap_preview'><br /><p>Tonight for dinner I made Eeny Meeny Chili Beany On Toast from <strong><a href="http://www.govegan.net/?page_id=11">Vegan á Go-Go!</a> </strong>(originally from <strong>La Dolce Vegan</strong> I believe) but as usual I made my own changes and it is a bit different (different amount of items and included some items not in the recipe).  The original can be found online if you do a search but I am not going to post it here.<br />
<br />&nbsp;<br />
1 15 oz can chili beans (including liquid)<br />
1  15 oz can black beans (including liquid)<br />
1 Tbsp  Mexican chili powder<br />
1 Tbsp Brown sugar<br />
1 tsp Onion powder<br />
1 tsp Garlic powder<br />
1 tsp Pepper<br />
1 tsp Paprika<br />
1 tsp Cumin<br />
1/4 tsp Salt<br />
1/2 tsp Crushed red pepper flakes<br />
1/2 Cup ketchup<br />
1 Tbsp Tamari or soy sauce</p>
<p>Serve on toast, 2-2 1/2 pieces per person.</p>
<p>Put all ingredients (except the toast of course) into the pot and stir them together.  Bring to a boil and then turn down the heat to let the chili simmer for about 10 minutes.</p>
<p>We like to  rip our toast into small pieces and then cover it with the chili, but you can do yours however you like.  I like to spread <a href="http://www.earthbalancenatural.com/">Earth Balance</a> on my toast before I rip it apart.</p>

<p>One of our favorite places ever is <a href="http://www.wanderinggoat.com/about/">Wandering Goat</a> in Eugene,Oregon.  Sadly, we no longer live there and can just get on our bikes and be there in 10 minutes.  I am reminiscing because my 4 year Veganniversary is on October 10 and <a href="http://hungryhungryveganos.wordpress.com/?s=wandering+goat">last year on my Veganniversary we stopped at the Wandering Goat for some Danishes and hot drinks</a>.<br />

<p>AND Woz surprised me with an awesome Wandering Goat mug that I love.  I haven&#8217;t used it much recently,but when I was on a coffee kick I used it all the time.  We were told there are some very good places to get coffee here in Albuquerque so I hope to use it soon <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> .<br />

<p>Wandering Goat is just a little place but it has a big presence.  So many different types of people can be seen there throughout the day.  White collar people, blue collar people, vagabonds, students, younger people, older people, and the list goes on.  People just go there to sit and relax, read, do homework, and to listen to the live entertainment.  We  usually went there for the tasty treats and to talk, but we also liked to play Connect Four which we found in the Goat&#8217;s collection of board games. The games just sit there, waiting and hoping that some customer will come and remove them from their boxes and get some enjoyment.</p>
<p>Wandering Goat isn&#8217;t 100% Vegan as they offer the choice of dairy for their hot drinks (which they actually charged a premium for compared to the soy and rice milks),but all of the baked goods and the soup that they offer are Vegan.  I never checked out all of their cold drinks in the refrigerator so I do not know if any of those happened to contain honey or dairy.</p>
<p>If you are ever in Eugene we highly suggest you check out the Wandering Goat.  They have delicious baked goods, great coffee and tea, and an awesome atmosphere that you will only find in the Eug.</p>

			<content:encoded><![CDATA[<div class='snap_preview'><br /><p>You will probably notice throughout the month that all of our Vegan MoFo posts will not involve food.  I realize it is &#8220;Month of Food&#8221; but for us Veganism is more than just food (which it should be to anyone that is Vegan as Veganism goes beyond just diet).  The majority of our posts have been and probably will continue to be food related, but we would just like to make it clear that Veganism includes what you eat, wear, type of entertainment you avoid (such as rodeos), type of hygiene items you use, avoiding items tested on animals as best as possible, not participating in &#8220;sports&#8221; that harm animals (such as hunting and fishing),etc.</p>
<p>Now that the serious part is out of the way I would like to post these two videos.  They  are videos actually making fun of Vegans but they are still pretty hilarious.  Most  Vegans seem to agree.  If you are Vegan and these offend you I apologize.</p>

<p>I (rahzh) entered a little contest that <a href="http://twitter.com/foodoro">@foodoro</a> tweeted on Twitter which was actually being held on their <a href="http://www.facebook.com/photo.php?pid=2547651&amp;id=49309136763#/photo.php?pid=2547651&amp;id=49309136763&amp;comments&amp;ref=mf">Facebook  page</a> for a prize on their website (confusing I know but try to keep up because it is worth it).  The first two people to guess what the Mystery Item was had the choice of <a href="http://chocolateinspirations.foodoro.com/products/vegan-gourmet-english-toffee">Vegan Gourmet English Toffee</a> or <a href="http://chocolateinspirations.foodoro.com/products/vegan-gourmet-coconut-brittle">Vegan Gourmet Coconut Brittle</a>.  The toffee is made by <a href="http://www.chocolateinspirations.com">Chocolate Inspirations, INC</a> and you can find several other delicious looking <a href="http://www.chocolateinspirations.com/store/index.php?cPath=52">Vegan options on their site as well</a>. I chose the toffee because chocolate covered toffee is one of my most favorite things ever.  I used to love Heath and Skorr bars.  And I am pretty sure I haven&#8217;t had any toffee (chocolate covered or uncovered) since becoming Vegan almost exactly four years ago.  If I have had it I do not remember, that is for sure.</p>
<p>The toffee and the brittle come in a bulk 1 pound bag or a 1/2 pound gold tent box.<br />

They are $15.00 and $20.50 respectively. The 1 pound bag is a much better buy at about $1.29 per ounce compared to the 1/2 pound which is around $1.86 per ounce.  The toffee is crunchy and nomilicious while the Swiss dark chocolate couverture covering is rich and smooth.  The chopped pecan topping is just the right amount making this dessert all around delectable.  The toffee and brittle are just two of the many Vegan products Foodoro carries and if the rest are even half as good as the toffee then they are worth trying.<br />

As of this post Foodro has <a href="http://foodoro.com/search?keyword=vegan&amp;filters=f669">278 Vegan items</a>, but be careful as they do have a lot of non-Vegan items and I do not recommend those as the animals would not appreciate it <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> .  Just make sure to search the term Vegan and you shouldn&#8217;t have any worries. </p>

			<content:encoded><![CDATA[<div class='snap_preview'><br /><p>Hi, everybody (said in my best Dr. Nick voice)<strong></strong>!  Happy Vegan MoFo.  Can you believe this is our second year as part of <a href="http://theppk.com/blog/2007/11/02/vegan-mofo/">Vegan MoFo</a>?  We actually <a href="http://hungryhungryveganos.wordpress.com/2008/10/01/hello-world/">started the blog</a> last year in honor of <a href="http://theppk.com/blog/2008/09/16/veganmofo-is-upon-us/">Vegan MoFo II</a> (and as part of Woztober <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' />  )  If you whip out your calculator, divide by 3, carry the 1, and round up (or something like that) you will have calculated that this is  indeed <a href="http://theppk.com/blog/2009/09/18/its-veganmofo-the-vegan-month-of-food/">Vegan MoFo III</a>.</p>
<p>We have come a very long way in a year (In real life and online) and have also moved beyond just being a blog.  We have many visitors, readers, and posters involved with HHV.  In the last few months we created a <a href="http://twitter.com/HHVeganos">Twitter account</a> and we now have over 1,200 followers!  If you follow us on Twitter  you will get to see things that you wouldn&#8217;t on the blog such as links to contests, articles, recipes, giveaways, and other people&#8217;s blogs.  You, of course, will get a daily serving of the Hungry Hungry Veganos by following us there as well.  We have a <a href="http://www.facebook.com/pages/Hungry-Hungry-Veganos/99392597952">Facebook page</a> where we make sure to post our new blog posts and occasionally link to other info (and others have posted some information as well). Don&#8217;t forget to become a fan!</p>
<p>This last year has had a lot going on for the Veganos (our wedding,multiple moves, job changes,etc) so we didn&#8217;t get to post nearly as much as we wanted to.  We were cooking,eating, taking pictures, and making recipes the whole time though which means we have many posts in queue.  We plan on posting much more this upcoming year and Vegan MoFo is a good time to start.</p>
<p>The idea behind Vegan MoFo is to write as much as you can during October.  There aren&#8217;t really any strict guidelines but most aim for 20 posts during the month.  Some set the goal higher and go for a post every day of the month.  MoFo should be a good jump start in our posting for the year and that means much more noms for you.</p>

It is hands down, no ifs ands or buts, the BEST non-dairy ice cream on the market (and made in our beloved Eugene!). We are going to say this once, and only once, so pay close attention&#8230;<strong>all vegan ice creams are NOT created equal. </strong>We admit that there are some other yummy non-dairy frozen desserts out there, but nothing, and we mean nothing, comes close to Coconut Bliss.</p>
<p>The good folks at Luna &amp; Larry&#8217;s (the creators of Coconut Bliss) were kind enough to send Wozzie a t-shirt for being such a fan. Say soy cheeeeeeeese!</p>

			<content:encoded><![CDATA[<div class='snap_preview'><br /><p>Okay friends, it has been WAY too long since the Veganos have posted but we&#8217;ve been transients up until landing in the Land of Enchantment just two weeks ago. Wozzie took a job and has bitten the corporate bullet (*gasp*). There are surprisingly quite a few positives to this development including our roomiest kitchen yet (yay for not having to store the kitchen utensils in the living room!) for Rahzh to experiment with recipes new and old. We haven&#8217;t named this pretty new kitchen just yet and will be holding a contest VERY SOON to name said <em>cocina</em>. The prize will be a yummy little number by the name of <a href="http://www.gomaxgofoods.com/">Go Max Go</a>. (Oh yes!) More details soon.</p>
<p>We have quite a few posts that need to be made (we are always taking the pictures) and found the we have several Eugene reviews to do. One of the things Wozzie misses the most from Eugene is <a href="http://www.yelp.com/biz/sushi-domo-eugene" target="_blank">Sushi Domo</a> and their options for the Vegan sushi. And since she is quite sentimental and missing the Eug after talking to a new work pal and explaining how he must get his hands on some vegan sushi STAT, this seemed like a good time to spread the yummy word.  Here are some pics from our very last visit. Wozzie can taste the soy sauce now&#8230;</p>
<p>We&#8217;d always start the evening off with some edamame, spicy, natch:</p>

<p>Followed by several nice sized rolls. Wozzie&#8217;s personal favorite was the Crop Burning which contained avocados, cucumbers, and shiitake mushrooms topped with hot sauce:</p>

			<content:encoded><![CDATA[<div class='snap_preview'><br /><p>Cookies are yummy, we all know that. If the cookies are yummy and actually healthy, well, it just doesn&#8217;t get better than that! We decided to try this recipe that was featured on <a href="http://vegetarianvixens.blogspot.com/2009/03/heart-healthiest-chocolate-cookies-in.html" target="_blank">Vegetarian Vixens </a>blog because it looked way too good to pass up. While petsitting for the adorable <a href="http://mollypups.blogspot.com/" target="_blank">Molly</a>, we took full advantage of her fully loaded kitchen to get our bake on. These beauties were soft, chewy, a little more oatmealy than we thought they&#8217;d be, but oh so vair delish!</p>

<p>And here&#8217;s how you can have them, too!</p>
<div style="text-align:left;font-family:georgia;"><span style="font-weight:bold;">The Heart-Healthiest Chocolate Chip Cookies in the World</span></div>
<ul style="font-family:georgia;">
<li style="text-align:left;">2 cups walnuts</li>
<li style="text-align:left;">3 T canola oil</li>
<li style="text-align:left;">1 cup light brown sugar</li>
<li style="text-align:left;">2 t vanilla extract</li>
<li style="text-align:left;">1 1/2 cups oat flour</li>
<li style="text-align:left;">1 t baking soda</li>
<li style="text-align:left;">1 t salt</li>
<li style="text-align:left;">1/4 t ground cinnamon</li>
<li style="text-align:left;">2 cups rolled oats</li>
<li style="text-align:left;">1 1/2 cup vegan chocolate chips (or 10 1/2 ounces vegan bittersweet chocolate, chopped)</li>
</ul>
<ol style="font-family:georgia;">
<li>Preheat oven to 350 degrees. Coat 2 baking sheets with cooking spray, or line with parchment paper.</li>
<li>Blend walnuts in food processor 30 seconds, or until ground into a fine meal. Add canola oil in a stream with the food processor running, and blend for 2 &#8211; 3 minutes more, or until mixture has the consistency of natural peanut butter, scraping down the sides of the food processor occasionally. Transfer to a bowl.</li>
<li>Whisk together brown sugar and 1/2 cup water in a small saucepan, and bring mixture to a boil. (Watch this, as when it starts to boil it can quickly boil over.) Pour brown sugar mixture over the ground walnut butter, add vanilla extract, and stir until no lumps remain.</li>
<li>Whisk together oat flour, baking soda, salt, and cinnamon in a separate bowl. Stir oat flour mixture into walnut mixture. Cool 10 minutes. Fold in oats, then chocolate chips.</li>
<li>Shape cookie dough into 1 1/2 to 2 inch balls (I used a spring-type ice cream scoop, and I used 2 different sizes, varying the baking time), and place two inches apart on prepared baking sheets. Now the original recipe calls for flattening the cookies with a glass dipped in water. I forgot with the first batch that went into the oven, and they turned out just fine with a lovely cracked top to the cookie. They did take a little longer than the recipe called for when I made them this way.</li>
<li>Bake 8-10 minutes, or until cookies begin to brown and tops look dry. Cool three minutes on baking sheets, then transfer to wire racks to cool completely.</li>
<li style="text-align:left;">Enjoy with a tall glass of rice or soy milk!</li>
</ol>

Life has thrown us a curve ball (we won&#8217;t bore you with details) and that&#8217;s monopolized most of our time over the past couple weeks. So without further ado, let&#8217;s get on with things, shall we?</p>
<p>This past weekend we found ourselves just outside of Cincinnati, Ohio visiting my brother, David. <a href="http://www.junglejims.com/">Jungle Jim&#8217;s</a> was hosting their second annual Weekend of Fire, and with Papo Delgado in town for the weekend, too, it was a no-brainer that&#8217;s where we&#8217;d be spending the afternoon.</p>

<p>Naturally, we are reading all labels to ensure Vegan goodness, so we were extra pleased to see this booth:</p>

1 Celery Stalk<br />
2 1/2 Cups TVP<br />
Pepper, Cumin, and Garlic to taste<br />
Hot Sauce to taste and tortilla chips as garnish</em></p>
<p style="text-align:center;"><em>In large pot, add 2 cups water and 1 cup tomato juice. Bring to a boil and add pepper, cumin, and garlic. Next add TVP and continue to boil until all liquid cooks off. Drain kidney beans and add to pot. Add all remaining ingredients to pot. Heat to desired temperature and serve.</em></p>
<p>This makes A TON so invite folks over or be ready for lots of leftovers. NOM.</p>

			<content:encoded><![CDATA[<div class='snap_preview'><br /><p>One of the things we never really understand is when people tell us they&#8217;d be Vegan if only they could afford it. This lament is one we hear quite often from people on the cusp of leaving the land of animal suffering behind. It&#8217;s true that if your diet is made up of pre-made frozen dinners, junk food and mock meats (which, don&#8217;t get us wrong, we do love!) that it could cost you a pretty penny from week to week but it doesn&#8217;t have to be that way.</p>
<p>People often gasp when we say we don&#8217;t spend more than $80 a week on groceries and that includes breakfast, lunch, dinner AND desserts for the week. One of the big tricks to this is to actually plan our meals out for the week so we can head to the grocery store with a list. Yes, this does take some time up front (but really only about 20 minutes or so) and we aren&#8217;t left wandering around the aisles of the store asking &#8220;What do you want for dinner?&#8221; only to get the response &#8220;I don&#8217;t know, whatever you want.&#8221;</p>
<p>For instance, this week we are having shepherd&#8217;s pie, white sketti, portabello burgers, chickpea cutlets, <a href="http://hungryhungryveganos.wordpress.com/2009/05/30/fabulous-falafel-gyro-with-titillating-tahini-sauce/">falafel</a>, potato soup, and a rice dish called Mexicali. Throw in a couple fruits a day and cereal every morning and you&#8217;ve got yourself a basic week with the Hungry Hungry Veganos. How much did all the ingredients for all these dishes come to at the grocery store, anyway?</p>

<p>Your eyes do not deceive you, the total for a week&#8217;s worth of groceries did indeed only cost us $47.40. So, with the extra money, we may splurge on some <a href="http://www.coconutbliss.com/html/flavors.html">Coconut Bliss</a> (Vegan ice cream at its best!) throughout the week or save it up for a night of Vegan sushi. We did make sure to get these from a local co-op on our way home just because who on Earth could pass up yummy cupcakes when you have over $30 left over in your grocery budget?</p>

			<content:encoded><![CDATA[<div class='snap_preview'><br /><p>Calzones have been a favorite of mine since college. I loved ordering up my very own little piece of yummy for a number of reasons. 1) It was cheaper than ordering a whole pie. 2) It was the perfect amount of food after getting home at 2 a.m. when the bars closed. and 3) It was in one cute little package that prevented broke roommates from hovering around and sneaking &#8220;just one slice&#8221;. Yes, the calzone was perfection to me.</p>
<p>Since going vegan I hadn&#8217;t really thought about my beloved calzones too often. Mainly because places didn&#8217;t offer a vegan calzone (yes, I know, hold the cheese and there you have it) but it seemed more worth our time perfecting <a href="http://hungryhungryveganos.wordpress.com/2008/10/07/scrumptious-pizza-made-simple/">pizza like this</a> instead. I seemed to be just happy in my little calzone-less world&#8230;until we moved to Upstate New York about a month ago.</p>
<p>We live just west of Ithaca and people kept telling us about Pizza Aroma and their amazing vegan calzones. Outside of Eugene&#8217;s own Pizza Research Institute&#8217;s P3 pizza, (which Rahzh <a href="http://hungryhungryveganos.wordpress.com/tag/veganniversary/">blogged about</a> for his veganniversary), I haven&#8217;t been all the impressed with the vegan pizzas that are being made out there so really didn&#8217;t go running at the first whisper of calzone. I was indeed quite skeptical.</p>
<p>Pizza Aroma is definitely a no frills pizza-on-the-go sort of joint but don&#8217;t let that fool you. What was served up for us was a made to order, hot and fresh, honest to goodness, yummy yum yum, worth getting in the car and driving a half hour (40 minutes with a damn detour) for vegan calzone. Made with black olives, spinach, roasted red peppers, eggplant, fresh garlic (ooo the garlic!), roasted garlic sauce, olive oil and <a href="http://www.followyourheart.com/vegangourmet.html">Follow Your Heart</a> mozzarella cheese. This, my friends, is something to have and to hold, behold:</p>

<p>And the bonus was they were HUGE! We each ordered one and while Rahzh was so excited and rallied through eating a whole calzone, we could have easily shared one. Mine made for a really great second lunch later in the day. The only critique we had of this dish was that the cheese could have been melted just a little more but outside of that it is definitely worth the hype. NOM.</p>

			<content:encoded><![CDATA[<div class='snap_preview'><br /><p>On occasion we&#8217;ll have guest bloggers here at Hungry Hungry Veganos and we had a request for one. So without further ado, I turn it over to our eldest, Dewey, to blog his little feline heart out:</p>
<p>Yesterday was Father&#8217;s Day and we (my other kitty siblings &#8211; India, Baby Kitty, and Maxwell and me) have the best dad in the whole world. While we pretty much have him wait on us hand and foot everyday of the year (we ARE cats you know), we decided to let him take one day off and had mom not cut her fingers open on a casserole dish (thank goodness it wasn&#8217;t on our food dishes!), that would have gone according to plan. No worries, though, Dad is a man of action and bandaged mom up and saved the day! (Which is good because Baby Kitty saw the blood and ran&#8230;there goes the dreams of being Kitty Nightingale). </p>
<p>We got Dad all kinds of good loot for his special day. We pooled all our kitty treats together, handed them over to Mom and she said it was more than enough to get him all this stuff. Look how happy he is!</p>

<p>And here&#8217;s a closeup of the goodies. He loves those cheapo pies and says they are definitely not for the faint of heart! The neato hoodie was purchased from the <a href="https://secure2.vegsource.com/farmsanc/item.cgi?rm=edit_item&amp;item_id=8075">Farm Sanctuary gift shop</a> and he loved the latest yummy from <a href="http://www.sweetandsara.com/products.php">Sweet and Sara, Rocky Road Bark</a>:</p>

<p>He says he loves everything but loves his kitties the most. (As if we ever even wondered about that?)</p>
<p>Mom and Dad went into town to also celebrate the Summer Solstice by getting some vegan soft serve (mint and chocolate twist) from Great Escape and then went to the lake to watch the sunset. Mom says she thinks she&#8217;s got the best husband ever and since he&#8217;s our Dad, we know that to be true!</p>

<p>I am interested in information about Vegan cooking courses.  I have found information on quite a few 1-day Vegan classes or vegetarian courses but that is not the information I seek.  I want to find Vegan classes or courses  that are longer (weeks, months or beyond) and cover multiple areas and/or methods of cooking.  If they are accredited and give certification upon completion even better,but not necessary.</p>

June 26-28 the  Let Live NW Animal Rights Conference 2009 (LLNWAR2009) will be held in Portland,OR at Portland State University in the SmithMemorial Building. 			<content:encoded><![CDATA[<div class='snap_preview'><br /><p>In the next 30 days there will be two major conferences in the USA and both are happening on the West Coast. June 26-28 the <a href="http://www.letlivefoundation.org/conference/"> Let Live NW Animal Rights Conference 2009 (LLNWAR2009)</a> will be held in Portland,OR at Portland State University in the <a href="http://maps.google.com/maps?f=q&amp;hl=en&amp;q=724+SW+Harrison+St,+portland,+OR&amp;sll=37.0625,-95.677068&amp;sspn=48.50801,81.5625&amp;layer=&amp;ie=UTF8&amp;z=16&amp;om=1&amp;iwloc=addr">SmithMemorial Building</a>. July 16-20 the <a href="http://www.arconference.org/index.htm">Animal Rights 2009 National Conference (AR2009)</a> will be held in Los Angeles,CA at the <a href="http://www.starwoodhotels.com/westin/property/overview/index.html?requestedChainCode=WI&amp;requestedAffiliationCode=WI&amp;goToRooms=yes&amp;lengthOfStay=&amp;rpoi=&amp;propertyID=1005">Westin LAX</a>.</p>
<p>Each conference has multiple sponsors and organizers (far to many to list them all. For a full list check out the website for each conference). The &#8220;Let Live&#8221; conference is being sponsored/organized by &#8220;<a href="http://web.pdx.edu/~salp/salp_saga/group_profile.php?id=309">Vegans for Animal Advocacy</a>, with support from <a href="http://www.letlivefoundation.org/">Let Live Foundation</a> as well as local area businesses such as <a href="http://www.herbivoreclothing.com/">Herbivore Clothing</a>, and <a href="http://www.foodfightgrocery.com/">Food Fight Grocery</a>&#8220;. The &#8220;AR2009&#8243; conference is being sponsored/organized by<a href="http://www.farmusa.org/"> FARM (Farm Animal Rights Movement)</a>, <a href="http://www.idausa.org/">In Defense of Animals (IDA)</a>, and <a href="http://www.seashepherd.org/">Sea Shepherd Conservation Society</a>.</p>
<p>The conferences can be many things and serve many purposes.  The obvious purpose that they serve is to educate people in multiple areas of AR.  With so many speakers/events/videos you can pick and choose what you would like to learn about. Secondly, they provide a time and place for like minded people to come together and  be able to relax and share their lives with each other.   Which leads to the third purpose of having fun. You can eat, drink, go to a nearby animal sanctuary, stay up late talking, and so on. While I (rahzh) have never attended &#8220;Let Live&#8221; I did attend AR2007 and I can say without a doubt that it served all three of these purposes.</p>
<p>After you leave you feel a sense of being rejuvenated and wanting to do more.  This happens because not only will you learn new information but you will be around people similar to yourself and have fun doing it which is important.  After leaving you may also feel a little sad though especially if in your day to day life you are not around so many like minded people. Still very much worth it.</p>
<p>We feel that, if possible, you should attend at least one of them ( make sure to register).  If you have the capability and resources to attend both then that is even better.  As they are both on the West Coast it makes it a little harder for people living closer to the East Coast to attend. Do not fret if this is you.  The Animal Rights National Conference rotates every year between Los Angeles &amp; outside of Washington D.C. and that means next year the conference will be coming to the East Coast. Not to mention there are other conferences throughout the USA and the World.</p>

			<content:encoded><![CDATA[<div class='snap_preview'><br /><p>Our copy of <a href="http://www.amazon.com/Vegan-Go-Go-Cookbook-Survival-Manual/dp/1551522403">Vegan A Go-Go!</a> is already getting some chocolate fingerprints on it from making this yummy recipe. Just being introduced to this super easy and super yummy lava cake of sorts was worth the price of admission alone!</p>
<p>What was almost as fun as eating this dessert was baking it in our latest yard sale find. We found this happy little toaster oven over the weekend for only $2. We were so pleased because we&#8217;ve gotten so tired of cranking up the entire oven when a little guy like this could easily do the trick! We also love that we don&#8217;t have to keep opening the oven door to see how something is doing since ours in a model with no window. Toastie has solved that problem and happily baked her first Chocolate Upside-Down Pudding Cake!</p>

			<content:encoded><![CDATA[<div class='snap_preview'><br /><p>So many updates. Where to begin?</p>
<p>I guess we will begin by asking something of you, our valued readers. We ask that you go to <a href="http://www.chow.com">Chow.com</a> and vote for our  <a href="http://www.chow.com/recipes/25796">&#8220;Fabulous falafel gyro with titillating tahini sauce&#8221; recipe</a>. We would be extremely grateful if you would do this for us and &#8220;start spreading the news&#8230; &#8221; (I could be the next Soy Frank Sinatra <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> ) in any way that you can (Facebook, Twitter, Myspace, your  blog, or even by word of mouth).  We originally were just submitting our recipes to their site, but saw that they had a contest going on and decided we would enter.  Most, if not all of the recipes, are not Vegan and it would be awesome if a Vegan recipe won.  Winning is not just based on votes, but if we get more votes more people will be more likely to check out the recipe.  So winning isn&#8217;t even necessary to show people that Vegan food can be delicious.  </p>
<p>As we mentioned we were submitting our recipes to Chow and that is because as of late we have been submitting our recipes to a bunch of different sites.  Some just normal food sites that add your recipe right as you submit it and to other Vegan sites that have recipe/resource sections and have to approve your submission.  So little by little we are spreading the word of tasty Vegan food as well the blog and other topics that we occasionally cover.</p>
<p>In spreading the word we have created a Hungry Hungry Veganos Twitter account (<a href="http://twitter.com/HHVeganos">HHVeganos</a>) And it has been growing pretty fast.  That means we now have the blog, a Twitter account (the more recent updates can actually be seen on the side of the blog), and a <a href="http://www.facebook.com/pages/Hungry-Hungry-Veganos/99392597952">Facebook page</a>.  If you know of anywhere else that is similar to Twitter and Facebook (besides Myspace) let us know.</p>
<p>And in submitting our recipes to  various places we have actually been FEATURED multiple times.  Yahoo! Our <a href="http://hungryhungryveganos.wordpress.com/2009/05/30/fabulous-falafel-gyro-with-titillating-tahini-sauce/">falafel and tahini gyro recipe</a> is the <a href="http://trynewfood.com/recipeofthemonth.aspx">recipe of the month</a> at <a href="http://trynewfood.com/default.aspx">TryNewFood.com</a> (we have other recipes on the site too), our <a href="http://hungryhungryveganos.wordpress.com/2008/12/02/thanksgiving-part-deux/">pumpkin shortbread cookie recipe</a> is <a href="http://www.veganslovelava.ca/index.php?main_page=page&amp;id=9&amp;zenid=be3156ea0379bf216b889dea4808bb5b">the recipe of the week</a> at <a href="http://www.veganslovelava.ca/">LAVA</a>, and as we mentioned in another post our <a href="http://hungryhungryveganos.wordpress.com/2009/03/30/tasty-tofu-lettuce-wraps-or-move-over-pf-changs/">lettuce wraps</a> were featured in <a href="http://www.meatoutmondays.org/emails/09-05-18.htm">FARM USA&#8217;s Meatout Mondays e-Newsletter</a>. Farm USA is the only one that archives so if you are reading this a week or month from now you won&#8217;t see our recipes being featured anymore.</p>
<p>And in personal news, Rahzh has a working job interview on June 8 at <a href="http://farmsanctuary.org/">Farm Sanctuary</a> for a Shelter Farm Assistant position. So everyone cross their hooves, paws, fingers, or anything else you have <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_biggrin.gif' alt=':D' class='wp-smiley' /> .</p>
<p>While we are mentioning Farm Sanctuary we should probably mention that they are having 2 bake sales as part of <a href="http://www.veganbakesale.org/veganbakesale/index.html">World Wide Vegan Bake Sale</a> which takes place  June 20-28. An excerpt about Farm Sanctuary&#8217;s bake sale:</p>

			<content:encoded><![CDATA[<div class='snap_preview'><br /><p>Falafel is one of our most favorite foods EVER. Especially for rahzh (he could probably eat it all day,every day). Sad thing is we both just discovered falafel a couple of years back (or less). Neither of us ever tried it before we went Vegan.  And it is sad to think we missed out on years of fabulous falafel gyros <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_sad.gif' alt=':(' class='wp-smiley' />   Luckily Woz discovered this food  of the Middle Eastern gods and introduced it to rahzh&#8217;s unsuspecting and unknowing mouth during one of his early visits.</p>
<p>&nbsp;</p>
<p>As you all know we moved from Eugene to Watkins Glenn (West of Ithaca),but we would still like to promote our favorite falafel places back in Eugene (we have mentioned them before). <a href="http://www.yelp.com/biz/mommys-pastrami-and-falafel-eugene">Mommy&#8217;s Falafel</a> has some of the most delicious falafel we ever tried. Once we found them we rarely ever went anywhere else unless they were closed or to try a new place. <a href="http://www.yelp.com/biz/alexanders-great-falafel-eugene">Alexander&#8217;s Great Falafel</a> is a little different,but just as good (Mommy&#8217;s had the added benefit of having seasoned fries). Alexander&#8217;s is also  a completely Vegan cart.  We shall miss them both and look forward to finding somewhere here with delicious falafel (even if only in Ithaca).</p>
<p>&nbsp;</p>
<p>These gyros are nommers ( We swear that it&#8217;s a word. Go and look it up if you don&#8217;t believe us <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' />  )and only take 5-10 minutes to prepare and about 20 minutes to cook. So in 30 minutes or less you will have magically delicious falafel err&#8230; wait a second this is a Middle Eastern food not Irish. As always we will continue to personalize the recipe as we continue to make it (after a certain point we usually start eye balling many of the ingredients).  As for now this is the recipe that we followed.</p>
<p>&nbsp;</p>
<p><strong>To make the falafel you will need:</strong></p>
<p>15-19 oz can chickpeas/garbanzo beans,drained (you could also soak your own)<br />
1/2 medium white onion, finely chopped<br />
4 cloves garlic, finely chopped<br />
2 tablespoon parsley, chopped<br />
2-3 tablespoons all purpose flour<br />
2 teaspoon cumin<br />
3/4 teaspoon baking powder ( 1/2tsp + 1/4tsp or  3x 1/4 tsp)<br />
salt &amp; pepper<br />
2-3 tablespoons olive oil (you could try another type if you wish)</p>
<p>Start by preheating the oven to 350 and drizzling the oil evenly in a shallow baking pan (we used a small glass baking pan/casserole dish).</p>
<p>Next, mash the chickpeas/garbanzo beans. You may use a mortar and pestle or a food processor but we have neither. So we used a spoon, potato masher, and our blender.  This way requires more work and depending on your blender it might mean doing it in a couple of batches to make sure the chunks of chickpeas/garbanzo beans are gone.</p>
<p>Add onions and garlic and blend some more.</p>
<p>Mix in the rest of the ingredients and you should get a thick paste-like consistency.  Spoon out the mixture and roll (using your hands) into walnut size balls and place in preheated baking dish. Flatten the falafel a little. Bake for 15-20 minutes, flip the falafel halfway through baking.</p>

<p><strong>To make the tahini sauce you will need:</strong></p>
<p>1/2 cup tahini (sesame seed paste)<br />
4 gloves garlic, minced<br />
3/4 teaspoon salt ( 1/2tsp + 1/4tsp or  3x 1/4 tsp)<br />
2 1/2 tablespoon olive oil<br />
1/4 cup lemon juice<br />
2 teaspoon parsley, finely chopped<br />
2 teaspoon cilantro, finely chopped<br />
1/4 teaspoon ground cumin<br />
1/2 tablespoon warm water</p>
<p>You may use food processor or mortar and pestle to combine garlic and tahini but we just used our blender. Then add salt, parsley, cilantro, and cumin to the mixture. Next, add olive oil, lemon juice, and water. If the mixture is too thick slowly add more warm water until you get the thickness that you like.</p>
<p>&nbsp;</p>
<p>Now all you have to do is take your favorite pita bread and top it with your favorite toppings ( greens/tomatoes/onions/etc) add the falafel and tahini sauce.  AND don&#8217;t forget to add some hot sauce. That puts it over the top. We love <a href="http://cholulahotsauce.net/">Cholula</a> hot sauce (especially the garlic version). And voila!</p>

			<content:encoded><![CDATA[<div class='snap_preview'><br /><p>We have the nets once again!!  Wow a whole week without net (not counting the time we were traveling without it) . And not counting the times we used the net at <a href="http://local.yahoo.com/info-11790573-grist-mill-cafe-burdett;_ylt=AmPV.EBUFTtBw10pbNPpqIwArWoL">Grist Mill Cafe</a> (which has some delicious Vegan options by the way) right down the road and at the <a href="http://www.watkinsglenlibrary.org/">Watkins Glen Public Library</a> <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' />   Who knew it was even possible to go so long without the Internet! </p>
<p>We will have some new posts and pictures soon:food we made/had back in Eugene, places we ate at during our move, and food we made/had here. </p>
<p>Also just before we made our move from Oregon to New York we were featured in <a href="http://www.meatoutmondays.org/emails/09-05-18.htm">FARM USA&#8217;s Meatout Mondays e-Newsletter</a>. </p>
<p>Woz had her first day at <a href="http://farmsanctuary.org/">Farm Sanctuary</a> on Monday and she really likes it there.  They have <a href="http://www.farmsanctuary.org/farm/calendar/index.html">multiple events</a> planned for the future so you should check them out.  </p>
<p>Also in Farm Sanctuary News, about a month or two ago they released their <a href="http://action.farmsanctuary.org/site/PageServer?pagename=VirtualExperience">Virtual Experience</a> which takes you into life of animals at the Sanctuary and into the horrific &#8220;life&#8221; of animals on factory farms.</p>

			<content:encoded><![CDATA[<div class='snap_preview'><br /><p>Just a post to keep everyone updated!</p>
<p>We have many stories/pictures/recipes to post and soon we will get around to posting them all (we are still trying new foods and making new foods)!  Recently we had been planning our wedding, had our families visit, and on April 26th, we officially tied the knot!!! One of the highlights was the wedding cupcakes from Eugene&#8217;s own <a href="http://www.divinecupcake.com/">Divine Cupcake</a>. So nom! We are now Mr. and Mrs. Dotoños (we both decided to change our last names to something new. To see the meaning behind it check out <a href="http://artellacafe.com/blogs/awake_and_dreaming/archive/2009/03/26/the-same-couple-a-new-improved-name.aspx">Woz&#8217;s blog post</a>). And, in the middle of all of this, we have also been planning a move. Whew! </p>
<p>That&#8217;s right, the Hungry Hungry Veganos will be leaving the Little Kitchen That Could and relocating from one coast to another. We are moving from Eugene, Oregon to about 20 miles west of Ithaca, New York (just a couple of miles outside of Watkins Glen). Woz will be doing events for <a href="http://www.farmsanctuary.org">Farm Sanctuary</a> which is extremely exciting <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_biggrin.gif' alt=':D' class='wp-smiley' /> . So as you can see we have been quite busy! Once the move is over things should be a little more normal and posts should start back up on a regular basis. Also on our way to New York, we have plans to hit a couple of restaurants with some pretty good Vegan food and we will definitely make sure to take pictures before we devour it all. We arrive at our new place around May 20 so look forward to new posts soon!</p>

			<content:encoded><![CDATA[<div class='snap_preview'><br /><p>We decided to try making lettuce wraps because of repeatedly having this wonderful concoction at P.F.  Chang&#8217;s.</p>
<p>When we go to P.F. Chang&#8217;s we never actually order any entrées and just stick to the &#8220;starters&#8221;.  And for the most part we only get the lettuce wraps.  We both get ourselves an order of the vegetarian lettuce wraps and sometimes we get some rice to go along with it.  We make a meal out of what P.F. Chang&#8217;s considers to be an appetizer.  For us it has all a meal needs; lettuce, tofu, mushrooms, water chestnuts, and some sauces and spices.</p>
<p>To us these taste better than the wraps at P.F. Chang&#8217;s.  So good in fact that we not only had them for dinner but we also had them the next morning for  breakfast/brunch <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> </p>
<p><img class="alignnone size-full wp-image-284" title="lettucewraps" src="http://hungryhungryveganos.files.wordpress.com/2009/03/lettucewraps.jpg?w=640&#038;h=480" alt="lettucewraps" width="640" height="480" /></p>
<p>cooked rice (amount and type is up to you,but we suggest around 4 servings)<br />
head of lettuce<br />
1 pound extra firm tofu, sometimes we even do 1 1/2 pounds if we have the extra tofu (drained)<br />
2  3/4 cups chopped mushrooms (your choice,but preferably shitake)<br />
4 tablespoons chopped garlic (fresh)<br />
2 tablespoons chopped ginger (fresh)<br />
4 oz chopped water chestnuts (drained)<br />
red pepper flakes<br />
soy sauce<br />
pepper<br />
onion powder<br />
<a href="http://www.earthbalancenatural.com">Earth Balance</a> (or  Vegan margarine/oil of choice)</p>
<p>Chop your the tofu into tiny squares.  Then spread out the tofu on  pan/cookie sheet ( We like to VERY  lightly  oil/&#8221;butter&#8221; the pan with EB so that the tofu doesn&#8217;t stick). Top with pepper, red pepper flakes, and soy sauce (to taste for the most part,but don&#8217;t over do it). Also top with just a little bit of onion powder.  Bake on 375 degrees for about 35-40 minutes.</p>
<p>At this time you can also start cooking the rice. Follow the brand/package directions for the amount of rice you are wanting.</p>
<p>When the tofu is almost done, melt some EB in a wok or frying pan and throw in the chopped up garlic and ginger.  Saute for around 5 minutes or  so until they are softer.  Add in the mushrooms.  At this time you can add soy sauce, usually about 4 shakes (depending on your palette). Also if you want to at this point it would be a good time to add some more pepper, pepper flakes, and/or onion powder.</p>
<p>Cook for about another 10 minutes or so [add the water chestnuts at this point], then add the tofu to the wok or frying pan and finish up the cooking &#8211; not long, just around 3 minutes.</p>
<p>Wash and dry the lettuce and pull off pieces about the size of your palm (some times we are bad and skip this step, but usually because it is organic lettuce).</p>

			<content:encoded><![CDATA[<div class='snap_preview'><br /><p>So there haven&#8217;t been any posts in about a month, but we have been trying new things and Rahzh is keeping up with his S&#8217;more New Year goal of trying new foods!  We haven&#8217;t forgotten the blog, just many things were/are going on all at once. We have at least 7 new foods to post (and some other things as well) about and would we have more, but sometimes we forget to take the camera.  We get so excited about actually eating the food to remember the camera. <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  Can you blame us?</p>
<p>Today we bring you Chicken Parmesan with Spaghetti minus the actual chicken and parmesan. <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' />  This one didn&#8217;t require any recipe.  It was the first time we have had it since being Vegan and believe one of the few (possibly only) times Rahzh had this tasty Italian dish.  It was just combining some pre-made foods, but oh was it delicious.</p>

<p>We made spaghetti with some <a href="http://www.newmansown.com/product_list.aspx?cat_id=3">Newman&#8217;s Own sauce </a> along with a <a href="http://www.gardenburger.com/product.aspx?id=11653">Gardenburger Herb Crusted Cutlet</a> covered with a slice of <a href="http://www.tofutti.com/cheese.shtml">Tofutti Mozzarella</a> and dinner was served.</p>

<p>I could end this post right here and it would be relevant to our blog and you would have a picture of delicious S&#8217;mores, but this wasn&#8217;t the real reason I am posting.  The real reason I am posting is to explain what I have decided to do for SNY.</p>
<p>I have decided that I will try to have a new food experience at least once a week. Mainly, I want to try ATLEAST  a new recipe each week,but that is not the only thing and it doesn&#8217;t have to be limited to just one experience a week.  Experiences such as trying a new fruit or vegetable, a new spice, a variation on an old recipe, a new cookbook, a new restaurant, a new processed food, a new combination of foods, or even a new spot for eating ( a chair, a bed, the floor, inside, outside,etc) are all fair  game (wait a sec&#8230; is that even Vegan? <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' />  ).  And to start off this year of new food experiences I got <a href="http://theppk.com/nomicon.html">Veganomicon</a>.</p>
<p>What all this of this means for you is more posts, more pictures, more info, more stories, and more recipes.  So really what it means is more awesomeness than before (which is pretty hard to imagine)!</p>

We haven&#8217;t done a whole lot of new stuff in the kitchen and were taken off guard one night as I was making my version of shepherd&#8217;s pie ala <a href="http://govegan.net/home.html">Sarah Kramer.</a> I won&#8217;t be modest in the fact that I make some of the best damn mashed potatoes on this planet and was intrigued when Huckleberry Potatoes arrived in our weekly food co-op order. </p>
<p>Here they are in their purple splendor just before boiling:<br />

<p>I really wasn&#8217;t sure about them or how they were going to mash/taste, but since they were all we had and no one was going to step outside into the crazy cold weather we were having at the time, these were simply going to have to do.</p>
<p>I&#8217;m glad we gave it a try because 1) it gave some really beautiful color to this dish:<br />

<p>And 2) They gave a slightly sweet taste to this that we just loved!</p>
<p>Huckleberry potatoes aren&#8217;t new to the scene but they are new to us. I&#8217;ve said it time and time again that we eat WAY more interesting foods now that we are vegan than we ever did when we were omnis. And purple potatoes are just the beginning. </p>
